intermission.

Last night I decided to make a simple chicken dish while watching the Preds vs. Oilers game, which we eventually won 3-2 in a shootout.  I started cooking at the beginning of the second intermission and was eating by the time the third period came on, so this is about a 20-minute meal.  Unfortunately I don’t think this is really good for you, but it was quick, simple, and delicious.  And every once in awhile you have to sacrifice for something yummy.  I was craving it so I made it.  I have made this once before a while ago.  I don’t know why I haven’t made it since, but I will be making it more now because I enjoyed it so much. 


St2’s Chicken with Goat Cheese

Ingredients
2 boneless, skinless chicken breasts
olive oil
4 tbsps of butter
2 tbsps fresh basil, chopped
4 tbsps garlic, minced
4 tbsps onion, minced
¼ cup of sun dried tomatoes, chopped
½ cup fresh lemon juice
2 slices of goat cheese
6 tbsps white wine
Salt and pepper, to taste

Instructions
1.     Lightly brush chicken with olive oil, then season to taste with salt and pepper.
2.     Place the chicken on the grill.
3.     While the chicken is grilling, sauté onion and garlic in about 2 tbsps of butter.
4.     Add lemon juice and white wine, reduce to medium heat and simmer for about 10 mins. 
5.     Add the remaining 2 tbsps of butter; sun dried tomatoes, and basil until hot. 
6.     By this time the chicken should be almost done, and make sure it is before placing a slice of goat cheese on each chicken breast so it can soften.
7.     Remove chicken from grill and plate.  Take a spoon of the sauce and pour over chicken.

NOTE: I used an indoor grill, since we are out of propane.  Also if you find the sauce to be too lemony, you can always add more butter. 

Other than cooking and doing homework, I spent the rest of the evening at chapter meeting with my sisters.
